• Tortellino Bologna: Approximate weight from 1.8 to 2.2 g.
• Cappelletti/Tortelloni: Possibility of producing larger shapes (up to 28 g) by changing the shaping kit.
• Efficiency: The system is designed to minimize pasta sheet waste (up to 90-93% use of the pasta sheet).
Distinctive Features of the "Matic" Series
1. Patented Closure: It is one of the few machines on the market that can give the tortellino the typical front "fold" of pasta sheeters, leaving the classic hole in the center.
2. Injection System: The filling is injected at low pressure to preserve its consistency and flavor (essential for raw meat or ricotta fillings).
3. Hygiene: Being mounted on wheels and made entirely of stainless steel with removable casings, sanitization at the end of each shift is quick.
4. Diagnostics: The control panel (the one in the side steel box in your photo) manages the cutting and closing times, synchronizing the pneumatic pistons with the movement of the dough sheet.
